Eden Rome

DORCHESTER Collection - Rome

A project to embrace the city

Surrounded by centuries of history, with a strong legacy that infuses every little detail, Rome is a unique place that still combines a certain idea of decadence with a feeling of awe. It’s Italy itself: traditions, archaeology, family gatherings on sunny Sundays, unique food flavors… and the Eden Rome, with its exceptional view of the Villa Borghese and its incredible gardens, offers the designers an ideal setting to create a spa, a gastronomic restaurant, and an all-day dining restaurant with a bar. The two Paris-based designers already had a very clear idea of the city: Sanjit Manku had lived there for a year before settling in Paris, and Patrick Jouin has always been fascinated by the city’s history and its relationship with arts and sciences.

The main inspiration for this project was the city itself, more than Italy as a whole. For the restaurant, the idea was to create a place that would be the perfect spot to admire the view of the Villa Borghese. At the same time, we also wanted to design a space that would convey comfort and proximity for large family gatherings on weekends, a strong tradition in Rome. In the gastronomic restaurant, we wanted to evoke the peculiar feeling one experiences while walking the streets of Rome. Surrounded by such intense beauty and so many layers of history, the feeling of awe can be almost overwhelming, even dizzying. We aimed to capture this sensation—of being lost in a dream that travels back through history, time, and culture. The lights are dimmed, creating a theatrical set. Collaborating with graphic designer Philippe David, we designed a fresco on a glass wall consisting of at least six layers of glass. Each layer received a special treatment—frosted, lacquered, chiseled, mirrored, and more—to add depth and the impression of a three-dimensional theater.
On the top floor, the bar, the all-day dining restaurant, and the gastronomic restaurant. From this vantage point, the Eden Rome offers a spectacular view of the Villa Borghese gardens, revealing one of the most beautiful spots in the city. Therefore, we chose not to design an interior that would compete with the exterior view. Instead, they decided to invite the main elements of the view—greenery, Roman icons, and the flickering sunlight on tree leaves—inside the restaurant. We literally brought the garden into the space. To achieve this, the entire space is wrapped with a large, abstract green wall made of glass and metal foliage that mimics the trees and gardens outside. Behind this wall, light filters through the mesh and metal leaves, creating a beautiful crisp, clean space in the morning. Comfortable bespoke furniture, including large banquettes and a lounge area complete with a wood and marble bar, fills the first space.
A covered terrace forms the center of the restaurant. Here, we used terra-cotta, wood, and steel as nods to Roman heritage. The lace-like ceiling on the terrace plays with sunlight, casting irregular patterns on the floor and walls. Deep colors like ochre, sienna, and green, accented by pink-grey stone for the tabletops and bar, create a warm atmosphere that relates to the history of the city. The Ella chair, designed by Patrick Jouin iD , completes the setting, bringing comfort to the space and a touch of elegance with its refined silhouette.
As for the spa, located beneath the building, we designed a pristine jewel box reminiscent of Roman baths, a retreat that offers a quiet pause from the hustle and bustle of Rome. There, guests can indulge in treatments that will reconnect them with their inner selves and help them find a new way to breathe. To provide such an atmosphere, we selected several noble materials and called upon craftsmen from Murano to perfectly align with the spirit of Rome.

The main idea for this space was to return to an original vaulted room, reminiscent of a traditional Roman bath, allowing guests to feel connected to what their ancestors once did: a combination of decadent and deeply satisfying tradition. Upon entering the space, you feel embraced by the connection to the ground and the water beneath.

We created treatment rooms as small cubicles with wood-lined walls to convey a sense of security, as if the spa were a refuge from the city and its turmoil. Bespoke glass sconces on the walls cast a gentle glow, as if reflecting light on water. Handmade by the renowned glassmakers of Murano, these oval-shaped lights evoke the feel of a torch-lit room and resemble a precious jewel hidden from view, like a treasure in a vault.
