At the top of the Monte Mario

Perched atop the verdant hill of Monte Mario, the Rome Cavalieri, inaugurated in 1963, offers a panoramic view of the Eternal City. The restaurant La Pergola, located at the pinnacle of this iconic establishment, is distinguished by its three Michelin stars, a rarity in Rome.

From the restaurant, the entire city unfolds before us. To the east, the first rays of sunlight illuminate the domes and bell towers emerging from a sea of red-tiled roofs, with the green Apennines as a backdrop. To the south, the historic heart reveals itself with the imposing silhouette of the Colosseum and the gardens of Villa Borghese. To the west, the view is dominated by the Vatican and St. Peter's Basilica, where the sun sets in a golden glow. Finally, to the north, the wooded hills of Monte Mario offer a refreshing contrast to the bustling city.
This is not an ordinary setting; it is almost surreal, like a postcard of Rome. Yet, we are not in a postcard; we are just above the city, or rather, we weren’t there yet…. We wanted to invite the essence of Rome inside the restaurant, to offer diners a culinary experience enhanced by an uninterrupted view of the city, where the tangible and intangible blend in a unique place.

"For some, Rome evokes the paintings of Piazza Navona by Canaletto or the terracotta hues of its architecture; for others, it’s the parasol pines against a summer sky, the Dolce Vita, or Nanni Moretti's scooter rides. All of this is condensed, distilled, and becomes the foundation of our project, in parallel with the work of the starred German Chef, Heinz Beck, who uses the traditions of Italian culture with new techniques to present classic flavors in a different light. Our project follows a similar philosophy, staying true to the emotional and historical essence of Rome while reinterpreting it.

The right wing reveals the main hall, where circular tables offer diners a panoramic view. The undulating fabric on the ceiling subtly illuminates the space, extending the exterior light. At the heart of the room, a console inspired by a grand piano adds an aesthetic and functional touch. On the other side of the room, sculpted and embroidered alcoves depict a botanical universe in echo of the Chef's work, topped by a glass chandelier that blends with a luminous rain.

For over 22 years, we have transformed historical buildings worldwide, listening to both the site, the location, and the clients to envision their futures.The transformation of La Pergola within the Rome Cavalieri perfectly embodies this philosophy. We combine emotion, avant-garde technology, and cultural history to create spaces that vibrate with life. Here, we sought to infuse the very essence of the Eternal City. The collective imagination surrounding Rome, the references to its iconic architecture, the characteristic terracotta and travertine, and the golden light of Roman alleyways at dusk, which enchanted us from our first visit, inspired every aspect of this project.
By listening to the hotel's history, its art collection, our client, Chef Heinz Beck, his work on plants and his pursuit of healthy cuisine, and drawing from the imagery we’ve accumulated over the years, we wanted to bring Rome into the restaurant. Each arch, drawing, and reference breathes this essence. We collaborated with trusted craftsmen and new meetings to transform initial sketches into tangible reality.
